Labels!

Maybe it's the springtime air and the thought of "spring cleaning", but I've had more of a desire lately to get organized. Get the house a little more clean and a little less "lived in" looking.
Here are a few of my mini-projects.

#1. Pantry labels!
First of all, we see all kinds of pictures in magazines of truly orgqanized and charming pantries.  But let's be real here.  Does anyone's pantry really look like this?  I mean, do mothers with small children and/or busy lives really take the time to empty each box of pasta, each bag of rice, each box of cereal into cute little canisters?  Sure, it looks great, but at least for me, it's not very practical.
That's not to say that I don't want an organized pantry. I do! My pantry was pretty much the antithesis of what you see above. It was a mess! especially all of my baking stuff.  Thanks to Better Homes & Gardens, I customized and printed out the free labels they offer at bhg.com
With a few glass canisters, a little hot glue, and some tacky putty, I finally got my pantry in order. Ahhhh... It's the little things that make me smile!

Project #2  Covering the glass of my bathroom cabinets.  I like the idea of the glass bathroom cabinets, but they really work best in guest bathrooms where you don't actually have to store real stuff.  Cute little candles. Little glass jars of cotton balls and mini soaps -  Adorable!  Boxes of medicine, thermometers, vaseline - not so adorable.  We have them in both our master bathroom and the kids' bathroom.  In our bathroom, we have very little storage, so we need every inch of it. But really - who wants to look at drug boxes?

My solution? Scrapbook paper!  Just cut it to size and slip it in! No need to even glue or tape it in. Voila!

New Recipes

I have tried a few, fun, new recipes this last few weeks and thought I'd share. We had a lot of winners (those I'd make again), and only one loser. (The crock pot Philly Cheese Steak sandwiches weren't so great.)  Here they are...

Sure, this one is fried, but who doesn't need a little fried mexican every now and then!
Chicken Flautas with Avocado Cream
Ingredients
For the Flautas:
Vegetable or canola oil, for frying
1 tablespoon butter
1/2 small red onion, diced
1 jalapeno, diced  (optional)
1 garlic clove, minced
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 rotisserie chicken, skin removed and meat finely shredded
1 cup fresh salsa
1/4 cup freshly chopped cilantro leaves
1 cup shredded Cheddar/Monterey jack blend
1 lime, juiced
Salt
16 (5 to 6-inch) flour tortillas  (or I used 8 inch tortillas and they worked fine.)
2 cups shredded iceberg lettuce, for serving
Toothpicks
For the Avocado Cream:
1 very ripe avocado, halved, pitted and flesh removed
1 (4-ounce) container sour cream
2 tablespoons fresh lime juice
Salt
Finely Chopped cilantro

Directions
Fill a large pot with enough oil to reach 2 inches up the side of the pan. Heat over medium heat until a deep-frying thermometer inserted in the oil reads 375 degrees F. To make the flautas: In a pan over medium heat melt butter and saute onions and jalapenos until tender, about 5 minutes. Add garlic, cumin, and cayenne pepper and cook until fragrant, another 2 minutes. Add chicken and salsa; stir to combine. Remove from heat and stir in cilantro, cheese and lime juice. Let cool slightly.
Preheat oven to 200 degrees F.
Working with 4 tortillas at a time, spread a heaping spoonful along the middle of each tortilla. Roll tortilla tightly around the filling and secure with a toothpick. Using tongs, hold each flauta in hot oil until firm, then release to continue cooking. Cook until golden brown, about 2 minutes, then remove to a paper towel-lined plate and immediately season with salt. Keep flautas warm in the oven on a sheet tray while assembling and cooking the remaining tortillas.

To make the Avocado Cream: In a serving bowl, mash avocado, sour cream and lime juice until smooth. Season with salt, to taste.

To serve, arrange flautas on a platter of shredded lettuce and serve with Avocado Cream on the side.
(Can't take credit for this picture, but this is what they look like.)

This one was a great twist for my non-lamb eating husband!
Chicken Gyros with Cucumber Salsa and Tsatsiki

Gourmet | March 2009
Total Time: 40 min

2 Kirby cucumbers, divided
1 1/2 cups Greek yogurt (3/4 pounds) *Be careful to get plain NOT vanilla-flavored
1 teaspoon fresh lemon juice, divided
5 garlic cloves, minced, divided
1 pint grape tomatoes, quartered
1 small red onion, halved and thinly sliced
1/3 cup chopped flat-leaf parsley
1/4 cup chopped mint  (omit if you don't like the taste of mint in your food)
1/4 cup extra-virgin olive oil
1 rounded teaspoon dried oregano
1 rounded teaspoon dried rosemary, crumbled
package of 8-inch pocketless pita rounds
1/2 rotisserie chicken, skin discarded, meat shredded (about 2 1/4 cups), or sliced, grilled chicken breast
Preheat broiler.
Peel and grate 1 cucumber, then squeeze it with your hands to remove excess water. Stir together with yogurt, 1/2 teaspoon lemon juice, one third of garlic, and 1/4 teaspoon each of salt and pepper to make tsatsiki.
Cut remaining cucumber into 1/4-inch pieces and stir together with tomatoes, onion, parsley, mint, remaining 1/2 teaspoon lemon juice, and 1/4 teaspoon each of salt and pepper to make salsa.
Gently simmer oil, oregano, rosemary, remaining garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small heavy saucepan, stirring constantly, until garlic is fragrant but not browned, 1 to 2 minutes. Toss chicken with 3 tablespoons garlic oil and brush one side of bread with remainder.
Heat bread, oiled side up, in a 4-sided sheet pan, covered with foil, 3 to 4 inches from broiler 3 minutes. Uncover and broil, rotating bread for even coloring, until golden in spots, about 1 - 2 minutes.
Spread some of tsatsiki on warm bread and top with chicken and some of lettuce and salsa. Serve remaining lettuce, salsa, and tsatsiki on the side.
Tsatsiki can be made 1 day ahead and chilled.

We made a great chopped salad the other day with homemade "Lou Malnati's Salad Dressing".

Lou Malnati's Salad Dressing
2 1/4 cup extra virgin olive oil
1 1/4 cup red wine vinegar
1/2 cup Cabernet Sauvignon, or whatever red wine you're drinking
1/2 tbsp black pepper
2 tbsp coarse salt
1 tbsp dried oregano
1/4 cup sugar (or less if you don't like it as sweet.)
Combine all ingredients and whisk with a wire whisk.
Yum!

Easter Egg Hunt Party

Our friends, the Neelys, invited us over for an "Easter Egg Hunt Party".  The kids had a blast playing together, eating pizza, decorating cupcakes, and hunting for Easter eggs.
Thank you Laura for hosting such a great party!

Easter Wreath!

I really wanted to make an Easter wreath for the door. I wanted something simple, something that incorporated a cross, and nothing blatantly cheesy.
THis is what I came up with. I bought a natural wreath at Michaels and found some natural-material flowers that I stuck in/hot-glued. I sawed a small wooden dowel in 2 pieces for a cross and hot-glued it together, finishing it off with rough rope. I stuck it into the bottom of the wreath and voila! My new Easter wreath!

Potty training

Ready or not, I finally pushed Austin into potty-training a few weeks ago. He turned three and it was time. I bought him some "Lightning McQueen" underwear and stressed that "we don't tinkle on our friends" (a.k.a. the Lightning McQueen on his underwear.) We've had our ups and downs.  We've had many all-dry days, a few days with some accidents, and a few issues with being comfortable going #2 on the potty. All in all, it is going well.   We certainly spend a lot more time in the bathroom though!

Ice Skating

Caroline and I have watched a little figure skating on T.V., and we've read a few books that mention ice skating. She really wanted to try it, so Caroline and I went with a friend and her son Bryce.

At first, Caroline was extremely cautious and clung to the wall with a death grip, inching along literally inch by inch.  It was a lot harder than she had expected.

She started to enjoy herself a little more once she got used to being on slippery ice.
Glenview ice arena has these awesome "ice walkers" that kids can use when learning to skate. It was perfect! She was able to get off the wall and slowly move around the ice.
She got a little more adventurous at the end and let go of both wall and walker. Unfortunately, she ended up falling and smacking her head on the ice.  Luckily, she wasn't turned off completely to ice skating. She said she'd like to try it maybe one more time.    Sounds good to me. :)

Summer or Spring?

A few weeks ago, we had an amazing record number of 70 and 80 degree days - and in March! (It's more likely to see snow in Chicago in March than a summer-like day.)
The kids were beyond thrilled! They got to play outside, get out the water stuff - baby pool and everything, and got to wear flip flops and short sleeves! They were in heaven!

At the park...

Playing "rice box"
Clayton inventing something with water and miscellanious stuff from the garage.

The hard part was trying to explain to the kids after the freak-summer weather was over, why they needed to wear long sleeves, socks, and winter coats again.

Out of the mouths of babes...

Austin comment from the other day... "It smells like poop.  Oh. Yeah...I think I did a toot."

Clayton comment from the other day... "Do you keep getting higher numbers after you get dead?"
(Meaning, do you keep celebrating birthdays after you die?)

Another Clayton comment "When I get older, I want to be an electrical engineer AND a shepherd."

Fire Zone

As part of our spring staycation, I took the kids to Fire Zone, a fire engine-themed play center in Schaumburg.  The kids got to wear fireman jackets, slide down fire poles, practice hoisting ladders, pretend to put out fires, and climb on & "drive" a real firetruck.

The outing ended with a fireman showing the kids all of the gear they have to wear and how to put it on. The fireman who did the presentation did a great job engaging the kids and making them laugh with the antics he threw in.

The kids had fun. I don't know if it is really worth the price of admission, (luckily I had a groupon!), but it was a good experience.  Afterwards, we sent to Wildberry for lunch. On our way out, Clayton, my little charmer, told the hostess station that "they make the best breakfast and lunches EVER!"  The owner/manager was standing right there and was so tickled by his comment, that he gave him a $10 gift certificate to come back.  Woo hoo!

Pizza Party!

On Austin's actual 3rd birthday, we celebrated with just the 5 of us. Cake. Pizza. More McQueen. Smiles all around for my little man-turned-three!

Lightning McQueen Party

We held a "Lightning McQueen" party for a few of Austin's friends.

We had 6 little boys and their moms come over. We ate Lightning McQueen cake, and drank from "Piston cups".

The boys did a character hunt for all the Cars characters.
Then we watched the clip in Cars where Guido changes McQueen's tires. The boys then got to practice racing to change McQueen's tires.
For their party favor, the boys took home a laminated placemat
and a racecar that they could drive on it.
It was a lot of fun watching all the little boys in action!
